If you are still feeling the change from 4 to 8 or 8 to 4 you might want to get it checked. I have a non-z-51 auto and it is impossible for me to tell the switch except for seeing the v4/v8 light change
Same for my non Z51 A6. I never feel a think and the switch back to 8 cyl is so instantaneous.
Eco mode is one of 5 driving modes all C7s have. they are Weather, Eco, Touring, Sport, and Track. It will go in 4 cyl on all roads when you are mostly coasting or holding a speed and not accelerating. At idle or when A6 put into neutral or in Park it is ALWAYS in 8cyl mode and stays there until a few seconds after you reach your desired speed and acceleration is mostly gone. It's a great feature and makes a great difference in the mpg. If you need to hear that great throaty sound ALL the time, as previously stated by others here, just keep it in TRACK mode.
In manual, you can feel a slight lurch if you are on a smooth road when it goes to V4 mode. It isn't a problem really.
When I ask for that V8 to get going again it is seamless. Of course it must be in ECO in a manual car like the rest of the forum has said. I am only putting it in ECO when I'm on the interstate in the paid lane. Basically if I find the need for cruise control then I might as well use ECO.
Just a quick follow-up to previous questions about Eco Mode. My 2015 Z07 after 1200 mile road trip with cruise on and lots of flat interstate never went into V4.

You'd be hard pressed to notice it. Even on my Manual the only way I can feel it switching to V4 mode is with my hand on the shifter. The instant you ask for any power, it shuts off. I'm sure it's even less noticable in the Auto.
I never noticed it until I turned off the stereo and concentrated on hearing or feeling it. I did sense it once or twice while really concentrating, but never in normal driving. If I didn't actually see it on the DIC I wouldn't notice it workiing at all, and fail to understand why some find it so irritating, as it does save a small amount of fuel in normal driving. As for NPP behavior, my exhaust is never open when in V4 mode, so I never get any weird sounds associated with the two operating together.
