Hit the media button, that will scroll through your connected devices. If it doesn't show there, try a different cable, it's also possible your iPod isn't supported. There's lots of nuggets of info in the infotainment manual, it's in the manuals sticky up top of this section. There's a list of supposedly supported devices in it too.
My 2016 Z06 stopped recognizing my iPhone 6 when plugged in and it would not connect on Bluetooth. After restarting the car a few times and hitting the power button the radio to no effect, I held the "projection" button and the carplay icon returned. It took at least 30 seconds, but it seems work fine since then.
I never could get my iPod to work. Well it worked once. So I copied all the music to a standard thumb drive formatted in FAT 16 and have had no trouble since.
