Unfortunately the GM Factory Service Manual (at least the 2014 version on AllDataDIY.com) seems to neglect including any information on the Oil Temp Sensor for wet-sump engines. I suspect it is co-located with the Oil Level Sensor, which is mounted in the oil pan, and the wires exit the side wall of the oil pan, on the passenger side.
The Dry Sump engine has the oil temp sensor screwed into the side of the oil tank, behind the passenger side fender.

Our 2017 with dry sump and oil cooler shows oil at 180-210 under the same conditions.
It would be interesting to know how much of the drop comes from the cooler, and how much comes from the different location of the oil temp sensor.

that picture looks familiar lol
I checked the 2014 helms manual and confirmed the dry sump sensor location and as you mentioned, they neglect to mention where the sensor is on the wet sump motor..

I have a similar photo to share. The sensor worked fine when the engine was reinstalled. But has since stopped working. I've reached the conclusion that it must be integrated into the oil level sensor. Although my trusty GM parts guy wants to sell me a sensor that looks exactly like the coolant temp sensor. And this is per my vin.

yeah not really wanting to go down that road again. I just added an external oil cooler/thermostat from improved racing. It has a port for a temp sensor. So i may just add a secondary gauge from that.

On gen5 Camaros, there's an oil sensor, but it's not accurate unless oil is dangerously hot, and it also does double duty as oil level warning sensor. The oil temp displayed is calculated by ECU, using coolant temp, as well as average recent RPM, engine load, etc. It was a total shock to be when I found out, and I only started investigating when I installed a $1000 giant oil cooler, that had zero effect on oil temps displayed at the track. When the discussion continued, someone mentioned GM only installs accurate oil temp sensors on dry sump models.
This was with the LS3 engines, but it makes you wonder.
