Longer version: I don't have a set of shop manuals (yes, I know I need to get a set), so my brother and I carefully started pulling trim pieces off. All of the fasteners were T15 torx screws. If I had to do it again I'd do it in this order:

#1: The rear view mirror needs to be removed. Turn it 90 degrees and it'll release
#2: Remove the sun visors. Small plastic cover and 3 screws each. The sun visors clips also have a small plastic cover that exposes 1 screw each.
#3: Carefully pull down the plastic trim. There are 2-3 spring clips on each side that have to release.

At this point the striker plates are exposed. 2 10mm bolts, and when replacing I put mine just a little bit lower on the driver's side than the original. The passenger's side was already as low as it would go, which might explain the original rattle, which was on the driver's side only.

Only note when putting everything back together was making sure the outer tip of the plastic trim gets put back underneath the weatherstripping; it takes a fair amount of manipulation and stretching.

Takes more time to remove the trim than anything. After you install the new strikers, be sure you have the roof adjusted before you reinstall all the trim.

The mirror twists off. There are two or three screws that secure each sun visor. The actual piece of trim just snaps in place. Using a trim tool and carefully selecting where to pry will help you avoid breaking clips. Search YouTube for C7 Windshield Replacement and the longer videos ones will show the trim being removed which I think you'll find helpful.
