Notwithstanding why or what your C-5 and C-7 have to do with buying a new C8/Z51/vert, I read no reason why you wouldn't order a new C8. As long as you're alive and mobile, I'd get busy ordering one asap. In fact, I'd see how I could get moved to the front of the line for a vert at a Chev.dealer.
However, in answering strictly what I would do? If I believed I were possibly terminal, I'd likely pass on ordering something that my heirs wouldn't use. That's just me, though. All the best to making a decision that works for you.

Wouldn't effect my decision on ordering exactly what you wanted in a C8, that you said you could afford/cash for. What of course makes sense is to involve your wife into the decision making here. Some don't have to involve their wives. Do what works for both of you...

Buy the C8, sell the C7 after the C8 arrives. Keep the C5 and see if you drive it after the C8 new wears off. If not, sell it too. If you still want the C5, keep it. It really isn't going to depreciate any more. The C7 will.
This is going to sound odd, but I had a huge sense of relief when I sold my modded Mustang GT when I decided to buy a C8. I had an entire pickup truck bed of stock parts to go with it and all I could think was if something happens to me, this will be a mess for my wife to try and figure out. The car and all parts and now gone and I sleep better. Just my opinion, but I would make everything as much of a win/win for both of you. You've had and enjoyed the C5 & 7, get rid of them and have less grief for your wife if she survives you. Her selling a C8 HTC would be quite easy.

You might want to talk to your financial advisor re: the C8. Especially if they're a fiduciary/actuary.
You haven't given us enough information regarding your financial situation for us to give anything more than an emotional response.
If you have all of your financial ducks in a row, then go ahead and enjoy your new car. If you don't have all your ducks in a row, then get them lined up. Your heirs/beneficiaries will appreciate this effort, big time. For when the time comes...
You know at 72 for me, it is very enlightening to read about the concerns all you slightly older guys have with the Corvette world now and in the future.
I keep asking if I deserve buying my eighth Vette at my age. But for me the answer is you don't know what tomorrow will bring says it for me. That, and the part about you can't take it with you. With encouragement from my wife I am very close to going for the new car. The way it makes my juices flow now just as it has for the last 25 years of Corvette ownership is not something I get from any other possessions. Plus I love the Corvette community interactions too.
I just left the hospital after visiting with my cousin who went to the ER three weeks ago and wound up needing emergency surgery. He had a tumor removed from his brain. One week later he needed a second emergency surgery to reduce swelling and bleeding on his brain. Sadly, pathology determined the tumor to be melanoma. It's been three weeks since he went to the ER and I would be surprised he lives another month. What makes me so sad is, we were just hanging out a few months back riding our motorcycles down to Daytona. Drinking a few beers. Having some laughs.
His entire life changed literally "overnight" with a sudden visit to the ER.
if you earned the money and it’s not going to be a really harsh impact on finances go for it. You live once . If it brings you joy not much else matters.
in a different boat but late 30s trying to retire by 50 but I questioned myself doing it big time. Way I see it it’s my 1 splurge, the. I’ll tighten the belt. Rather splurge now anyways. Who knows how much time we get.
