Need Interior
#1 buy a copy of the AIM for your year car...it has all the details of installation/disassembly that you need;
#2 remove and clean all of the removable panels; then inspect them for damage;
#3 repair any panels that can be salavaged...original panels repaired well will look/fit better than any aftermarket panels ever could;
#4 buy any panels/parts you need to replace;
#5 re-dye all panels (old and new, so that they match) with SEM ColorCoat vinyl dye (not spray can stuff--do a SEARCH for more info on how to do this job right!).
#6 give all parts a coating of polymer protectant like Nu-Vinyl or Meguiar's for plastic parts [and never use Armor-All again
];#7 reinstall parts and enjoy your 'new' interior...it will look as good as new.
Finally: No, I don't know any such installers in Jersey. But, since the interior is TIME-intensive [but easy] work, it would still cost a 'bloomin' fortune to have someone else do it.
