Need help-I have a 69 Coupe that I have owned for the last 15 or so years. The turn signals have never canceled. I finally got around to pulling the steering wheel. The old grease was caked all around the springs. I cleaned all of that and bought the plastic cog that hits the springs pushing and canceling the signals. They still won’t cancel. What the heck? Anybody else had this problem?

Perhaps you might want to check out the information Jim Shea has written about steering columns.
There's a good chance you'll find some guidance there.
If the information that Alan has provided works...GREAT.....if not....the it can be attributed to the steering column is not correctly 'clocked' to make it so the turn signals can actually work.
Knowing if you have a standard column or tele-tilt column is also helpful if you still have the same problem.

Did you buy a new switch too. The switch is probably bad if the cog is new. If it's old make sure the teeth are still in good shape. And make sure the hub is there to make the cam rotate with the shaft.
