Red is an awesome interior color for C3s, and I love my white on red 80. I have a black 79 with the more beige 78 "Oyster White" interior. I love it. But the late 79 and 80 was a bit more gray (more noticable in the carpet).
Below is a photo from the web (perhaps a Forum member's car), with a great oyster/gray combo (not the original 80 interior, but even better).
The gunmetal would look great. I love an early C3 with the rare gunmetal interior!
I "third" the comments for the bright blue interior as well - that would be an eye-grabber.

I repainted my 69 with the original Cortez Silver. It had an all black interior but I swapped out the black carpet for silver. It's an OK accent and completely changing the interior color was further than I wanted to go.
Since you are willing to take that extra step, go bold. Bright red or blue. Whatever you pick, pick an exterior accent to match. Calipers certainly and pin stripes for sure if you can get that done.
Somebody suggested die cast cars. Couldn't hurt. You might stick the seats back in and try some colored pillowcases and sheets, see if you least like the combo.
Lots of good suggestions and opinions. I like the 73 to 75 darker oxblood red better than brighter ones. Maybe Two tone with charcoal seat inserts, charcoal carpet and
the door panel insert.
