The conditions are: 55-65 mph, 185-190 F, 70-75mph 210 to 220 F. Cools back down when I slow down. Pulled the thermostat yesterday, seems to be ok (180) (stuck it in hot water). I don't know if the electric fan is kicking in. I have to change the fuel pump today, so I'll R&R the radiator and flush the system, see where it takes me.

I'm in the same boat as you temp wise, I can even go higher with the a/c on and 95 deg day. Everything rebuilt and/or changed but to no avail.

Default Update on engine temp

Tore into engine compartment, replaced waterpump, fuel pump, all hoses, had radiator repaired, replaced core support that was badly rusted. Got it back together, put in a 50/50 mix of anti-freeze.
The wife took it out and leaned on it (NEVER tell the wife to lean on it) and it ran at max 210 F with both fans on. Before it was 240F+. At cruising speed it runs 180-190F. Thanks for ya'lls help.

The knock is caused by pre-detination (spark knock). This is can be caused by carbon build up in the combustion chamber, bad timing, low octane fuel. I would try running on a higher octane fuel first, if that doesn't cure the problem, check your timing. Another good cure is a water injection system it helps alot. It did wonders for my wifes suburban with high miles. I even noticed a change in eg temp after the install.
