That's about it. You may run into some linkage issues with the 4 speed. I would do alot of measuring first to make sure the trans is in the existing location.
Lakewood bellhousing- Writing it down...
New flywheel- Okay that's good to know.
Cut crossmember- No problemo! I was going to modify mine anyway. I liked an example of someone else's tubular crossmember I've seen on the forum. I want to tuck mine above the exhaust pipes.
Tach converter- What if I get Autometer gauges like I was planning to do anyway? Would they work better with the newer style engine?
Extend power steering ram- Another worthy note, thanks.
Cut front coil springs- I figure this is because the LS1 is lighter than the older Gen I & II blocks, correct?
Electric fan- Aluminum radiator and electric fans are in my plans even with my 383 idea.
Miscellaneous hoses- Check.
Electric fuel pump- Does this still remain true if I were to carburete the LS1?

Are the wiring harness and PCM still needed if I take the Edelbrock carburetion route?
And by front accessories, I trust you mean: alternator, etc...

The carb kit has its own wiring/computer to control the ignition since the carb setup still uses the stock LS1 coils.

Alternator, water pump, power steering pump, A/C (if required), and the tensioner.

If you get electric gauges then you won't need any type of converter.
