I do a similar technique, I just wait a tad longer so its not tacky and use an xacto knife.
If you follow Rob's suggestion it helps to use the blade after the paint has 'flashed' but is still a little soft. This way the blade is able to cut a very sharp edge on the paint. This system really works well on all the dash and console trim pieces that are black with chrome exposed.

You will get the best results by removing the metal parts from the door panel and painting them separately. But, you can get good results by just masking them off from the door panel while they are still attached.
