Even if it were possible, I don't know why someone would bother to try, it's just 12 bolts to remove them.

Simple : I had a hell of a time getting them on and even that was when the body was off the car. I cannot imagine what it will be like with the body and everything on the frame.
The usual procedure is to unbolt the headers, and secure them somehow, then lift the engine out. When you put the engine back in, you drop it in and re-attach the headers. It's not the same as installing headers with the engine in the car, which can be difficult (as you well know, apparently!)
The fuel pump kinda sticks out, and should be removed, as Lars suggests. Even if the engine can be physically removed without removing the fuel pump, it is relatively delicate, and can be damaged during removal of the engine. The same goes for the distributor and carb.
