Grade 5 bolts have a good 'safety factor', too. But the difference is in the resistance to shock loading. Grade 8 bolts are relatively brittle, compared to the more maleable Grade 5 bolts. Grade 8's are stronger...but you don't need stronger than a Grade 5 bolt.
You can put whatever bolts you want in YOUR car. I'm just explaining why The General used Grade 5's when the car was designed.
P.S. And I see that you are using 1/2" Grade 8's...which are not that much stronger than the Grade 5 9/16" bolts.
