I don't think the fans are even coming on. Kacyc3 called it in the other thread, the relay is not hooked up properly. Her mechanic doesn't understand how a relay works.

It would certainly explain the 3 mile club.. Good call.

I would still change that set up. Far superior if she is never selling the car.

I would agree get your self a De Witt set up .
if there is any problems with the De Witt product , it is that they cool to well .
In cooler weather here in Australia ( not that we get a great deal of cool weather these day ) my car runs cold, fans only run in grid lock conditions in the city.
I don't a controller just the set up that came with the core and fans from De Witt supplied by VanSteel work perfectly.

Yes, change fan set up so she can sit in traffic and not stress on a hot summer day. Then get the plug for that relay and have the wires done right with heat shrink tubing and a fuse.
Like I've said in other posts, I have basically the same setup, stroker and fans with no shroud. When I'm rolling, temp is not an issue. Sit too long at a light and it will creep up.

Lol on the 3 mile club, yeah that's ridiculous.

Car looks great.
Other than the iffy radiator fans, your equipment all looks more than adequate. The SBC water pump impeller is designed to move flow in a specific direction. It is important.

You need to ascertain what the problem is and then address it. Don't just throw money and parts at it.

It seems to me that all the information to troubleshoot, inspect, and repair (or replace) has been provided in the responses. I would not buy anything else until I figured out what the problem is.

You guys are assuming that relay with the wires off is for the cooling fan, has that been established ?

No it hasn't been. It's almost impossible to get anything established with this thread.
I thought the same thing today about the relay, I don't know what else it would be for, the headlights? She hasn't said anything about them not working. Just that it's overheating. The engine pics look really good, like someone did things up right, all but that relay.

i am confused about some things myself.
like did the temp run fine before A/C?
was the serp belt system on before A/C fix?
how good does the water flow when you disconnect the upper hose
and drain it in a bucket with engine running?
what timing setup?
no worries, i am always confused.
