Anyone know how the rear fiber optic cables are held into the console lens? I have a new harness and the ends are loose in the lens. Am I missing a piece? Car is a 1971.

It's just an interference fit. If the new ends don't stay in the lens then it's likely your lens is broken. Compare a photo of a new lens online to what you have to verify. Or you could post a photo of yours.
Hi P,
There should be a very small brass 'collet', with a 'barb', on the end of each of the 3 cables.
These are pushed into the 3 plastic tubes that are part of the lens.
If these tubes have cracked from age securing the cable can be tricky.

Alan
You can see that little barbed fitting and the split in the left side plastic tube on the lens.
Hi P,
Can you GENTLY try to open the fingers a little so they grab?
Otherwise, I'd use a little silicone around the flange area to secure the cable in place. Be careful you don't get any on the cut end of the cable.

Alan

Either the new lens diameter it too large or the flange is too small.
Anything that would create a tighter fit will work.
If prying out the flange tabs doesn't work I think I'd try first a short length of drinking straw in the lens hole or just a wrap of paper or teflon tape around the flange.

Another possibility would be to put 1 or more thicknesses of shrink-tubing on the brass collets, so that the fit into the lens strip is quite snug. Be careful with applying heat to that tubing. If you have a heat gun, you can better control the temps reaching those pieces so as to not damage the glass fiber cable (they are pretty tolerant of heat; just don't overdo it with match/candle/etc).
