Which gasket should I use on my Quadrajet? The original one that I took off appears to be like the one on the right but I read that those gaskets can block off vacuum passages in the carb body.

Nonsense - there are no vacuum passages that get blocked off by the base gasket. You don't state the year of your car or engine, but if you have a 1970 - 1981, use the 1/4" thick open-plenum gasket on the right. If you have a 1967 - 1969, a special 3-gasket "kit" is required to seal the exhaust groove crossover, and neither one of the gaskets shown would be correct.
