I recently bought a 79 with 60k miles. When on, the car runs and drives great. However, when I attempt to start it after it’s been sitting a while, it takes a long time to turn over. But, if I drive the the store and turn it off, it starts right up.
It sounds like fuel is draining out of the carb if the car is sitting for a while, and takes a bit of cranking to get fuel from the fuel pump to the carb.

My 79 did that. The carb is probably still a bit wonky, but I'll never know.
Anyway, two things helped a lot with long starts:
1. Email @lars, ask for his timing (and HEI, and Q-Jet papers), and follow his timing instructions. A bit more advance at startup helped.
2. I replaced the fuel filter with the proper check-valve filter, oriented in the correct direction
I ended up replacing the fuel pump in that car, but didn't notice a change in symptoms (other than the leak stopped).
Also, are you pumping the gas twice to the floor to reset the carb before you try to start in the AM?

You need to install a non-windowed seat in the carb, and make sure you have an ethanol-resistant accel pump installed. Make sure the choke is actually set up right and functional, and make sure you are using the correct starting procedure.
