There are a few vendors of the delete brackets, a search would answer that. I built my own so I can't comment on others.
I bought the bung from my local parts place. Drill hole in collector adapter and weld on bung, no big deal.
They may have used an newer master cylinder.

You may want to consider some felxible heat shielding material to protect the starter wires and the starter from the heat. Also consider some spark plug wire heat shields to protect the plug wires where they pass near the header tubes.
With the passenger side header in place, the stock starter cannot be removed. IF it went bad, you would have to remove the passenger side header to get the starter off.
That is a PITA to do if the original starter goes out, so some people replace the stock starter with a "mini starter". These starters have a smaller size motor and use gear reduction to provide the torque needed to spin the motor. These starters bolt in and can be removed easily.
You may have to lengthen the cables to connect then to these mini starters, but it's not hard to do if you do it before the heder install. The positive battery cable may have to be replaced with a longer one and the three wires to the solenoid may have to be lengthened. This is a "maybe" so you should ckech some of the threads concerning header installs to see what others have done.

Ceramic or thermal coated headers go a long way to keep heat from engine components. The Hedman Hedders you are looking at are used by a number of Forum members.
As far as the AIR pump delete, there is a Forum member who has an AIR delete bracket for a reasonable price. He lives in Canada.
