When I am in commute mode, I try to keep the rpms way down. Shift at or before 2000, and get it into 6th gear by 55 mph. I recently calculated my mixed-driving commute mileage over 30 gallons at 27.0 mpg. You have to drive pretty easy to knock down that kind of economy. The next tank, I got a little frisky a couple of times and it went down considerably.
6th gear at 55? You must have 4.10s or 3.90s, cause with my 3.42s, 6th gear at 55 would mean my tach would be at 1000 rpm - way too low. I shift into 6th at 70-74 MPH, which is about 1500 rpm.
I have to admit that I am surprised at how many 2500-3000 shifters there are out there. Another handy data set would be to plot average mileage vs average shift engine speed.

2000-2500 rpm. In cars with smaller engines, I shift at higher engine speeds, primarily because of the lack of torque. With my C5, there's no lugging (level road) at 2000 rpm, that's for sure!

I have to admit, having the supercharger adds to the fun as I like building a little bit of boost then shifting and hearing the BOV.
