I was recently stuck in stop and go traffic and the outside temp was around 95 degrees. I noticed the coolant temp went up to 230 and leveled off. As soon as the traffic opened up the temp went back down to around 195. Is this normal or is 230 too high??

Normal! Both fans don't even come on til like 225. I put in a 180 thermostat and had the fans reprogrammed when I had my car tuned after the cam install. Now my car never gets above 195 in traffic and the Houston heat.

In the conditions you've noted that's normal. With no airflow through the radiator in 95F weather, the engine temp will start to climb. The electric cooling fans will start to kick in - the first one at about 226 and if the temp continues to rise the second one kicks in around 238. If it goes higher than that, then you need to worry, but otherwise you're in the normal range. The fans will start kicking off when the temps start dropping, and at normal highway speed the airflow will keep the temps between 190 and 200.
