You're right in the sweet spot. LSx engines are designed for oil temps between 190-240 degrees (although you'll rarely if ever see temps that high in normal street driving).
Autocross and road racing will push temps into the high 200s, esp. down here in TX.
Len, that is about right Ambient temp plays a big part as you know... my temps are a tad lower, but I know you are running higher compression ratio and more HP so that makes sense. On the trip to bowling green, temp outside was about 82 and at cruise around 70mph I was running about 201-205 give or take a few degrees/rpm's
