From what I understand, early C5s were running a little rich (correct?). Would removing the MAF screen make it a little leaner (more air), or would it go the other way (more fuel, since the sensors detect more air)? I've tried to search for the answer, but I couldn't find a definite answer.

Z06s without screens throw lean codes if some aftermarket air filter systems are installed. If you want to ingest more air, keep the screen and swap out the stock air box for a good aftermarket CAI system. You will gain 10+ RWHP.
The C5 MAF is "CALIBRATED" with or with out a screen. If yours was calibrated with a screen and you remove the screen, you are going to effect part throttle fuel economy and performance most likely in a NEGATIVE direction. When your in WOT (the area where the screen would be a minor restriction) the MAF isn't controlling your PE tables. There being controlled by a table. The MAF is out of the loop.
You use your MAF for probably 90% of your driving. So, removing the screen for 10% of your driving time and adding maybe 3-5 HP really isn't worth the hustle.
If you are going to have the PCM tuned after adding MODs, removing the screen would be able to be compensated for through tuning.
