I have a 00 Coupe with 86,000 miles on it and want to put new shocks on the car. My car is a daily driver so I don't need to go overboard with shocks. What would everyone recommend for a quality shock?

If you want to stick with the base suspension, C6 shocks are a no brainer.
I installed my C6Z06 shocks from Gene Culley last weekend. Can't beat the price and and the shipping is very fast. It is more of a struggle to get the old ones out than putting the new ones in, but there are great write ups on here that show how. These are much heavier duty than your stock ones. I did not notice any improvement in ride, but knew that going in. Firm ride, but you are glued to the road.
Bilstein Sports with the Z51 suspension. Hard as a rock. great on the track, rough on the street. I guess you can't have everything.
Goodyear runflats = hard as a rock.. It's not the shocks that are the problem.
Bilsteins are it! Nascar only moved away from them cause Penske came out with their own. Nothing else is better, it's just a compromise that favors a different need... Your wife or a passenger will never like an on-ramp win so there is no reason to expect stock GM shocks to deliver :p
Now, if GM were to introduce a "Sport Shock" that really worked... Thats another story altogether and I do respect your opinions Bill :o!! GM is awesome and is just now stepping into their own again, time for change :p

You have a choice on 3 types Bilsteins for ride quality or should I say purpose but they will out last an OEM shock. OEM gets bids on shocks and the cheapest wins. Bilstein was the Vette supplier for many years but were beat on the C5 bid.
