You might want to look at what you're getting into...
Depending on the method you utilize to lift the engine, it's going to require a combination of removing the intake, lowering the front drivetrain cradle, and/or removing the exhaust manifolds, to properly give clearance for changing the mounts. The motor mount brackets near hug the factory exhaust manifolds. If you do not have access to a lift and/or engine hoist you're going to have some work to do.
If I were doing it I would probably try the method of dropping the front drivetrain cradle, as you would just need to lower it enough to alleviate pressure on the mounts and for removal, and go in under neath. It would be quite a beast to do still, but if you can get the car high enough on stands it would probably work.
As far as parts whatever they offer at the local parts store.
How long does it take to remove and replace motor mounts? Should I use original Chevy mounts? Car is basically stock.

I replaced my motor mounts with stock GM mounts a few months ago. I did not find it to be difficult but it was a bit time consuming.
I did not drop the cradle either. I had to remove the exhaust manifolds from the engine. This was to get to the engine mount brackets that the motor mounts bolt to. I unbolted the mount brackets which bolt to engine using 3 bolts. Then you just swap out the mounts. Then re-install everything.
I think it took me about 5 or 6 hours. The majority of time spent is just getting the AIR tubes and manifolds out. Could probably do it in half that time if I did it again.
I would go with an OEM or OEM replacement mount if you're stock. I have Hinson poly mounts, and they seem to be quality. I have just installed them and have very few miles on the car. However, if you are stock, poly mounts do increase noise and vibration.

100% on the mark! Did a friends 2000 C5 coupe the same way. Jack up one side and change the mount. Then do the other. Just make sure that the intake does not make hard contact with the fire wall /cowl/
