If I had [real] leather areas on the seat covers, I would us a product made to 'feed' the leather to keep it supple and healthy. But, the black leather-wrapped steering wheel I installed was vinyl dyed to match the interior and I have used Nu-Vinyl on it for years (nearly 10). Sweaty hands, lots of use--not one crack, peel, chip, etc. in the surface. So, I would say that in some instances, vinyl dye and polymer protectant on leather surfaces works VERY well.
You just have to know what you have and how you are using it....long term....to determine how to care for your different interior parts.
