If I bought a Chip & 160 thermostat, what all will
it do for me?

If you got the "Thermomaster" chip your fans will turn on earlier to take advantage of the 160 degree stat and it will give you a very generic performance tune. You may see a couple Hp as all they do is bump the timing a couple degrees across the board.
Is it because if the type of chip I described, or
any chip in general?
Most aftermarket chips fall into that category especially Hypertech, and JET. Unless you get a full blown custom burned chip to your specs it is a very generic tune. But in reality unless you have some mods such as a cam, ported heads and things like that, a chip really won't do much for you. Unless you just want to lower your fan turn on temps.
It'll do well by changing fan settings, but the 'performance' settings are useless and since you dont have the electronic transmission, its not going to help that either.
True that if you get the right Hypertech chip, it will bring the fans on a lower temp, but you can achieve this with a simple replacement temp switch which costs around $20
When I bought my 86, it had a Hypertech chip. Last year, my computer was giving me problem, so I reenstalled the stock chip. That did not solve my problem, so I replaced the computer, with the stock chip. Big difference, at full throtle. I really think it does improve perf.
No proof, (dyno), but I can easely break loose in 2nd gear with the chip, but I have to hamer it with the stock chip, and it will not break loose like it does with the Hypertech.
Many members call hypertech, hypercrap. That being said, hypertech with a 160 tstat will communicate with the computer to turn the fans on earlier BUT your vette will not necessarily run cooler. If you want your vette to run cooler, first class maintenance (flush system etc.). Hypertech will change shift points but that will not make you run faster. Just my .02.
